How to Open a Durian (Safely!) ⚠️

You’ll need:

  • Thick gloves (spines draw blood!)
  • Sturdy knife (cleaver works best)
  • Cutting board (I’ve seen pros hold durian with one hand and cut with the other hand. If you’re reading this guide, you’re probably not a pro)

Step-by-Step:

  1. Find the seams – Durians have natural lines where the husk segments meet (usually 5-6 lines). Finding them is easier said than done if you’re a beginner. If you don’t cut along the seams, you risk cutting into the flesh.
  2. Insert knife – Wedge blade into a seam about 1/3 from the stem
  3. Twist and pry – Rotate knife to crack open (listen for the iconic “creak”)
  4. Peel apart – Use hands (with gloves!) to separate husk sections
  5. Scoop pods – Remove flesh-covered seeds with a spoon
Unless your palms have ultra thick skin like me, I highly recommend the use of gloves.

Storage & Handling

I don’t suppose you’ll put the whole thing in the fridge. After opening, put the flesh in a sealed container to contain the smell (unless you want the whole fridge to smell like durian). Eat within a few days after opening.
